I have this problem. I love Pina Colada smoothies from Orange Julius. In fact, I never order anything else. EVER. My
obsession great fondness for this particular drink began when I was a small, small child. But it really cemented at one point in my junior year of high school. Let me give you a little background. Growing up, the closest Orange Julius was 75 miles away. Yes. Pity me. My poor soul. So, needless to say, going to the big city was not an everyday experience. It was a special occasion.
And what was that occasion?? At this particular point in my high school career, I was beginning a journey that most junior and high school (although I have heard it is much younger now) students dreaded. I WAS GETTING BRACES. It’s true. And, more specifically, at this stage, I was getting spacers. Dun, dun, DUUUNNNN. Can I just say how horrible those were?? Anyway. Because of this procedure, I had to come to the city, not one, not two, but THREE times. IN ONE WEEK. This is big news, people. And let me tell you, I did it. Oh yes I did. I had THREEEE Pina Colada Smoothies that week. It was wonderful. It was fabulous. It was moving. I was lost in a sea of creaminess.
One great thing about this particular smoothie is that it serves as a great base recipe. Throw in some strawberries or raspberries! Not feeling the pineapple? Use a banana instead! It is completely versatile, yet always smooth and creamy. Want some extra protein? Add a scoop of vanilla protein powder. Here is what ya need to make this creamy pineapple-coconut drink at home.
Full-fat coconut milk – IN A CAN!! (in the Asian section or baking section of most grocery stores)
Regular coconut milk – in a carton
Honey or protein powder (both optional)
Cut the pineapple in half and using a small knife, remove the middle core (because nobody likes that hard stuff!). Or, if you have a pineapple slicer
ignore all this and just push that sucker through. Awesome! Slice the pineapple into chunks, and put about 3 cups into a blender container.
Add about a cup of canned coconut milk. This adds the most wonderful creaminess to the smoothie, you won’t even believe it. Pour in a cup of regular coconut milk, add honey or protein powder, ice, and you are ready to rock-n-roll!
- 3 c. fresh pineapple (or 1 can crushed)
- 1 c. full-fat canned coconut milk (in the Asian or baking aisle)
- 1 c. regular coconut milk
- 1-2 t. honey (optional; for a sweeter drink)
- 1 scoop protein powder (optional; omit honey if using this)
- De-rind, de-core, and slice up pineapple until chunks.
- Add to blender container.
- Add canned coconut milk, regular coconut milk, honey or protein powder (if using), and ice.
- Blend until smoothy and frothy.
- Serve immediately!
